Baked Tilapia Fillets with Mustard Crumb Topping

Baked Tilapia Fillets with Mustard Crumb Topping
REGAL SPRINGS/ Costco Original Recipe
1 cup breadcrumbs (panko or fresh plain)
2 sprigs fresh thyme
4 Tbsp prepackaged fried onions, chopped
Salt, to taste
Freshly ground pepper, to taste
3-1/2 Tbsp butter, softened
4 Tbsp Dijon or yellow mustard
2 (about 8 oz each) Regal Springs fresh tilapia fillets
Preheat the oven to 350 F. Mix breadcrumbs with thyme and fried onions. Season with salt and pepper. Melt butter in a pan over medium-high. Add crumb mixture, then sauté until golden brown. Remove mixture from pan and let cool. Mix in the mustard.
Rinse the fish fillets, pat dry, season with salt, then place on a baking sheet. Place the breadcrumb mixture evenly on the fillets. Bake the fish for 15 to 20 minutes, or until the fish reaches an internal temperature of 145 F. Garnish with thyme.
Makes 2 to 4 servings.
Tip: Serve the fish fillets alongside desired vegetables.
Leigh’s Keto version/Air Fryer:
1/2 cup sliced almonds, chopped
2 Tbsp prepackaged fried onions, chopped
1/2 tsp thyme
Salt, to taste
Freshly ground pepper, to taste
1 Tbsp butter or margarine
1/2 Tbsp dry mustard
2 dashes Worcestershire sauce
2 (about 6 oz each) fresh tilapia fillets
Lemon, wedged
Preheat the air fryer to 400° F.
Mix chopped almonds and fried onions with thyme. Season with salt and pepper.
Rinse the fish fillets, pat dry, season with salt, then place on a small piece of foil sprayed with non-stick cooking spray.
Melt butter in a pan over medium-high. Add crumble mixture and sauté until golden brown. Do not burn, browns quickly. Remove mixture from pan and let cool. Mix in the dry mustard and Worcestershire sauce.
Place the breadcrumb mixture evenly on top of the fillets. Spray top of breadcrumbs with non-stick cooking spray. Bake the fish for ~5 minutes on foil in air fryer, or until the topping is well-browned. Garnish with thyme (if you have some) and season with lemon juice, if desired.
Makes 2 servings.
Tip: Serve the fish fillets alongside desired vegetables. Vegetables can be roasted in bottom of air fryer if started a few minutes earlier. Bake the fish on the upper rack, on foil.
